Raw Chocolate Candy Recipe

[photopress:nibs.jpg,full,alignleft]For those who would like to know a little more about the raw chocolate candy I’ve been raving about here is a recipe. I’m still playing with it and if you have any ideas or inspirations please post them in the comments section. I will say that this was the BEST chocolate that I’ve ever had and got rave reviews at a party I took them to. It also is very quick to make (thought not cheap).

Take 1 Cup of raw cacao powder ( you can get these online or in some health food stores). If you are using nibs, grind them up in a blender or food processor and use about a cup and a half. Add 1/2 cup of coconut oil, 1/2 cup of coconut butter and 1/2 cup of almond butter (tahini might work too?) , a dollop of vanilla extract and a little more salt than you’d think you need (salty chocolate is awesome and make sure you are using good non-bleached sea salt). Blend and add agave nectar, or raw honey (or maple syrup though that is not raw) to taste…best to add a little less and keep adding more till it’s sweet enough.You can also put in cayenne pepper if you are so inclined.

It should now be in a very gooey form. Put spoonfuls onto wax paper and put in freezer for 15 minutes and they’ll be done. They have a perfect texture and will melt in your mouth. They never get hard either no matter how long they stay in the freezer for. You can also keep them in the refrigerator. They’re always just the right consistency if they are kept cool! When they were hard we wrapped them in tin foil to give to friends and told them to just put them in the freezer before they opened them. These are incredibly good tasting and healthy for you too so EAT ALL YOU WANT!! Haven’t you always wanted to hear that? :-)

Note: Do not over blend this mixture! It will turn into a nice creamy consistency after a little bit. Stop there. If you keep blending, the chocolate clumps up and it it is not nearly as nice.

Raw cacao is a superfood and will give you tremendous energy. It’s a great way to start out your day. I hope others experiment with this recipe and leave some feedback and results in the comments section.

**note: just updated this recipe so that instead of 1 cup of coconut oil, use 1/2 cup of coconut oil and 1/2 cup of coconut butter. The texture is much nicer and it gives it a wonderful coconut flavor!**
